SUMMER FUN WATERMELON SALAD

Ready in 20 minutes

Serves 8-10 people

Ingredients

  • 1 small (or ½ large) seedless watermelon

  • 1 cup fresh basil leaves, thinly sliced

  • ½ cup fresh mint leaves, thinly sliced

  • ½ cup crumbled feta

  • 2 tbsp fresh lime juice

  • 2 tbsp balsamic vinegar

  • 3 tbsp extra virgin olive oil or avocado oil

  • Ground black pepper to taste

Preparation

  1. Chill watermelon in fridge until ready to use. Remove rind and chop watermelon into 1 inch cubes.

  2. Mix the feta, basil, and mint into the watermelon chunks.

  3. In a separate bowl, whisk the lime juice, balsamic vinegar, olive oil, and pepper. Pour dressing over melon mixture and toss gently.

  4. Serve immediately
