SNOW WHITE SOUP

Ready in 50 minutes

Serves 4 people

Ingredients

    • 3 large leeks, thinly sliced

    • 1 medium onion, thinly sliced

    • 1 large pear, peeled, cored and diced

    • 2 medium parsnips, peeled and sliced

    • 4 cups vegetable broth

    • 3 tbsp  butter

    • Salt and pepper to taste

    • Sour cream and parsley to garnish

    Preparation

      1. Melt butter in a large pot over medium-high heat.

      2. Add onions and leeks and saute for about 5 minutes until softened.

      3. Reduce heat to medium. Add the pear, and parsnip. Cover and cook for 5 to 8 minutes, stirring occasionally.

      4. Add brother and bring soup to a boil.

      5. Reduce heat and simmer for 20 minutes until vegetables and fruit are soft and cooked through.

      6. Remove from heat and allow to cool for 10 minutes uncovered.

      7. Blend soup in small batches until very smooth.

      8. Transfer to serving bowls and garnish with salt, pepper, sour cream and parsley.

      9. Enjoy!
